Things are going really well for us! It's been easier staying Paleo by being accountable to this challenge! I know I don't feel like a fat blob....even though I'm not "losing weight" or anything...I simply feel healthier, even after only 4 days! Dave and I had an awesome Paleo Sunday dinner at a friends house complete with Paleo dessert! Paleo chili, stuffed bell peppers and strawberry "pie" with coconut whipped cream. YUMMY in my tummy!

This week on the lunch and dinner menu at the Johnson household:
Paleo Meatloaf
Paleo Cream of Chicken and Broccoli Casserole
Paleo Mahi Mahi Piccatta
Sides: sauteed spinach, stewed okra and tomatoes, roasted butternut squash! All of that stuff was cooked yesterday for the week.

Dang! Now I'm hungry!

Explain Paleo meatloaf. Because I had meatloaf at my Memaw's house after church yesterday and I don't think it was Paleo. But it was good. And probably the mashed potatoes and green beans were not paleo, but they were good.

Haha! Paleo meatloaf:
2# Grass Fed Ground Beef
1 white onion
1 can Muir Glen Organic Crushed
Tomatoes with Basil
1 finely diced zucchini (for added veggies and color - you can add green peppers or spinach or anything else you like to up your veggie intake)
1 egg
Splash of EVOO
Put in baking dish and cook for about 23 minutes in 425 degree over. Drain off grease.

I'm 99.9% sure it's not as good as Meemaw's, but if you're eatin' Paleo, it'll work! :)

The Hill's did all the meat prep yesterday around 100 blocks of red and white meat for the 3 to 5 days it will last it all will go as far as we choose to eat meat I eat meat as pros more than Amber. and I eat more blocks total than she
but fat is what we are not blocking close.
we will see @ the 1/2 way point if we need to tighten it up.

I like the idea of a cookoff! The recipe links are great, whenever I have the chance, I will cook again.

Last night I had a lean steak and acorn squash. Tonight, steak and sauteed zucchini and yellow squash. Perhaps some strawberries and yogurt for dessert.

This challenge is EXCELLENT accountability for me. I Zone on occasion but have done it continuously since Sunday. A whopping 4 days, and I already look and feel better. I am fired up to see everyone's results at the end of this Challenge!

ALL THE COACHES AGREE...
preparing your food ahead of time makes sticking to your nutrition plan a whole lot easier!

AMEN! When you're hungry and out of food bad things can happen such as eating whole pizzas and half a coconut cream pie! :)
