2 whole grain tortillas (make sure it's 100% wheat)
2 1/4 cups black beans, drained ( you can use less if you like)
1/2 cup shredded nonfat mozzarella cheese
1 cup salsa
1 tsp ground cumin
1 tsp garlic salt
cracked pepper to taste
cooking oil spray
- Preheat oven to 350.
- Whisk together the egg whites, cumin, garlic salt, and pepper. Coat a nonstick skillet with cooking spray and heat the skillet. Add the egg white mixture. Cook and stir over low heat until egg whites are cooked. Set aside.
- Lay tortillas on a cutting board and sprinkle with black beans. Top with the egg whites and shredded cheese and roll tightly. Wrap the burritos with foil and bake for 2 minutes.
- To serve: Unwrap the burritos, cut in half and serve with salsa.
